With the tangy, fruity and sugary sweet flavor, berries are some of those ingredients that are just naturally suited to be paired with other foods.
For these cakes, we decided to pair them with a fresh lemon honey yoghurt mousse.
This match is really dreamy in its simplicity, but what’s it about the berries and honey/lemon combination that works so well?
We think it’s due to the mellow and delicate notes of the mousse that let berries play center stage.
Honey also brings out the sweetness of both the blueberry compote and the forest fruits crémeux and tones down the acidity just a bit, making this a match made in heaven.
We also like to balance textures as well as flavours, and that´s why every layer of this cake is made with different techniques, to give every bite a different character.
Everything inside the cake is made, whenever possible, with local, ecologic and handmade preparations, all the ingredients that we use are top-notch quality and have been cooked in the best way as to not make them lose any nutritional properties.
All the decorations are completely edible and handmade by us either from chocolate and modelling chocolate.
